Noilly Prat Original Dry is created using fine white wines. A
unique production step in its crafting is L’Enclos, where a
selection of some of the wines used are aged outdoors in oak
casks. The wines lie in their barrels in the courtyard outside
the Maison for 1 year. Exposed to the natural elements of the
area – cold, warm, wet, dry, wind and rain – they develop complex
flavours essential to the final product.
Then, after the ageing process, these wines are blended with a
secret recipe of 20 s and spices that are carefully sourced
from around the world. They include chamomile, Moroccan coriander
and Tunisian oranges as well as elderflower, among others. These
botanicals are added and stirred by hand every day during the
maceration process, which takes place over a period of three
weeks.
The unique maceration and ageing process, along with the
savoir-faire of the Maître de Chai, ensure that the taste of
Noilly Prat Original Dry is preserved from generation to
generation.
