Q: Will this work on copper and be waterproof under pressure?

I used my durafix aluminium rods today on aluminium. I don't think they would work on copper. The only thing I can suggest is to try it on a scrap piece of copper. Try welding two pieces together and then try to break the weld.

Q: could they be used for an aluminium ladder some rungs have slight cracks appearing

Whilst these could be used for that, it would be far better to get a new ladder as saftey is vital when at any height. Most aluminium ladders use quite thin material, so if you do attempt a repair, apply the heat slowly to a larger area to avoid the repair area melting away.

Q: Can these be used to patch small holes in steel like alumaloy rods can?

Unfortunately no! It's great with aluminium and acceptable on stainless steel, but doesn't like steel at all.
