Will this wire in and correctly work for a 2003 Buell Blast 500cc?

It will work for any bike. But it's essentially custom wiring. It's not plug and play. If you are comfortable with a wiring diagram then this will be no problem. And the instructions are in Mandarin. There are some great reviews on here that explain the pin-outs. You will also have to mount the magnet on the wheel and dial in the correct circumference (in mm) to get the speedo to read right. I used JB weld to mount the magnet. I put this on a 1985 Honda cb450sc. Good news is that it works well and looks good.

How do i switch it from kph to mph?

With the unit on push and hold the button on the back for a few seconds it will change from mph to kph

Do I need to use the magnet and sensor or can I retro fit my existing speedo cable? Also current bike is 5 speed, so cap 6th gear wire?

You have to use the sensor.  No socket for the speedo cable. If you wanted to use the cable you would have to convert the signal to digital from the speedo cable.  The sensor works well. I used one sensor and JB weld to stick it to my rim, I didn't have a space for it to fit anywhere else.  My bike is a 5spd but has no gear selection indicator (1985 Honda) so just used 5th for the topgear/OD indicator and taped off anything I didn't need.  Good gauge,  a little hard to see in full sun,  but no complaints otherwise.

Wiring Method:

Barrel connectors:

Black: Electric Switch Positive Pole

Red: Battery Positive (normally 12V positive)

Gray: 6 Gear 12 Negative Control, LCD Display

Three Pin Sensor Connector:

Red/White: Sensor Positive

Green: Sensor Negative

Black/White: Sensor Signal

Six Pin Connector:

Pink: First Gear,12V Negative Control, LCD Display

Green/Red: Second Gear,12V Negative Control, LCD Display

Green/Black: Third Gear,12V Negative Control, LCD Display

Yellow/Red: Fourth Gear,12V Negative Control, LCD Display

Yellow/White: Fifth Gear,12V Negative Control, LCD Display

Green/Red: N Gear 12V Negative Control, LCD Display

Nine Pin Connector:

Orange: Left Turn, 12V Positive Control, LCD Display
